Vitamin C (Ascorbic Acid)

Vitamin C is required for the healthy growth and repair of our tissues, for our adrenal gland functions and to maintain healthy gums. Ascorbic acid also assists in the production of ant-stress hormones and interferons. These are proteins which are made, and released by, our cells in response to the presence of invading pathogens, such as viruses, bacteria or other parasites. A virus-infected cell will release interferons causing nearby cells to ramp up their anti-viral defenses.

Vitamin C is the favourite vitamin of all age groups. Yes it tastes sour and sweet at the same time, but people never hesitate to take a tablet of vitamin C or eat fruit, which is full of this vitamin When you hear the word 'citrus' you should remember that all the citrus fruits and vegetables are full of vitamin C.

Here are some examples red berries, tomatoes, potatoes, broccoli, cauliflower, Brussels sprouts; red, yellow and green bell peppers and cabbage. Vitamin C is a great antioxidant and is responsible for promoting immune system. It is also required to produce collagen in our body, which holds cells together and for making chemical messengers in the brain.

A deficiency will cause Scurvy, which is characterised by brown spots on the skin, spongy gums and mucosal bleeding. These vitamins can be easily destroyed by food processing and cooking, therefore it is very important to have the correct knowledge while choosing food for your daily diet. Hi Ian, this is a lot of great information that you have here! Water soluble vitamins are great because you can take mega doses and wash the excess out with adequate amounts of hydration. This is especially effective with vitamin C when someone is sick.

Hi Jared, Yes, you're right, that's one of the advantages of the water soluble vitamins; and the example you give, of vitamin C, is a good one. What a lot of people don't realise is that not only can our bodies lose water soluble vitamins, especially vitamin C, through our urine, hydration and perspiration etc', but there are so many other polutants in our modern world that actually kill vitamin C. For example smoking kills vitamin C, whether it is from actually smoking yourself; or, by breathing in other people's exhaled smoke, second hand. Smoking also creates free radicals that do untold damge to the cellular structure of our bodies. There are so many other airborne chemical polutants, such as breathing in car exhaust fumes etc', that do exactly the same. This is just another good reason to make sure that, although we might have adequate vitaminisation in our dietary intake, we should all consider taking vitamin and mineral supplements as well.
